In Western Maharashtra, especially around Kolhapur and Sangli, food is known for a bold, aromatic character. Kanda Lasun Masala grew from the practical traditions of rural farm kitchens, where families prepared a carefully layered spice blend during summer and stored it for the year ahead.
Onion and garlic form the heart of this masala. Red chilli adds warmth and colour, while the supporting spices give it a layered aroma. Its crushed texture brings character to both dry vegetables and rich gravies.
Ingredients
Onion, garlic, ginger, fresh coriander leaves, mint leaves, curry leaves, groundnut oil, dry red chillies (Lavangi, Byadgi, Kashmiri and Sankeshwari), coriander, cumin, sesame, poppy, mustard and fennel seeds, turmeric, dry coconut, stone flower (Dagad Phool), bay leaf, black pepper, cloves, cinnamon, shah jeera, asafoetida (hing), tirphal, nagkesar, star anise, black and green cardamom, javitri (mace), dry ginger, nutmeg, kasuri methi and salt.
Contains sesame seeds and mustard seeds; made with groundnut (peanut) oil. Manufactured in a facility that also processes nuts and other spices.

How to use it
Start with 1–2 teaspoons in your preparation, then adjust to the quantity of food and your preferred heat. Use during cooking or towards the final stage for enhanced aroma.
Taste before adding extra chilli or salt—the blend already brings seasoning.
Storage
Keep tightly closed in a cool, dry place, away from moisture and direct sunlight. Use a clean, dry spoon. Best before 9 months from the date of packaging when stored as recommended; check your pack for its dates.

Do I still add fresh onion and garlic?
Yes. This masala complements fresh onion and garlic rather than replacing them. Adjust your recipe to taste.
Does it replace garam masala?
It brings its own Kolhapuri flavour. Depending on the recipe, use it alongside garam masala or in its place.
Is it suitable for Jain cooking?
No. This blend contains onion and garlic.
Does it contain artificial flavours or preservatives?
